The coffee cultivation in the Fallas Mora Family dates back three generations. Our story begins with grandfather Herminio Fallas Jiménez, a pioneer in coffee production in our community. Herminio tended to his plantations for decades, passing on all his knowledge to his son Eliécer Fallas Mena. Our father inherited the coffee gene, driving the production of exceptional high-quality coffee.
Deyner Fallas, the eldest brother in the family, has always been passionate about coffee cultivation. In 2012, he decided to establish Microbeneficio CerroVerde with the aim of processing our own beans, ensuring complete control over quality. The name "Cerro Verde" comes from its location facing El Dragón Hill, known for its imposing beauty and characteristic green color.
Microbeneficio Cerro Verde is situated in the Zona de los Santos, in the coffee region of Tarrazú, specifically in San Francisco de León Cortés. The farm and facilities are located at an altitude of 1,930 meters above sea level. The altitude, combined with soil characteristics, microclimate, meticulous careof our plantations, and artisanal processing, result in specialty coffee of superior quality.
Currently, our dedication and commitment continue, focusing on the production of specialty coffees in micro-lots primarily for export. With asteadfast focus on quality, we have successfully entered key markets such as Japan, the United States, and Europe, establishing solid and enduring relationships with our customers.
We are a microbenefit committed to the conservation of the surrounding ecosystem. During harvesting, we ensure that the beans reach their optimal ripeness to maximize their organoleptic properties. Once harvested, we proceed to the artisanal wet processing.
The microbenefit was designed taking advantage of the natural terrain relief, which facilitates the dragging of the fruit. We use a circular water system and mechanical demucilagination, achieving minimal water and electricity consumption.
After the wet processing, the coffee is placed on African beds for sun drying until it reaches the ideal moisture level. To ensure quality, we conduct periodic and exhaustive cuppings. Once cupped, the coffee is allowed to rest in storage before being distributed to our customers.
Our customers can learn the entire story behind our coffee, from soil preparation to the final packaging of each of our microlots. Throughout the entire production chain and various processes, we carefully attend to every detail to ensure the quality that characterizes us.
